This recipe is the perfect appetizer or healthy snack and it's awesome as a topping for grilled chicken, pork or fish. We often make it for Taco Tuesdays at our house as it adds a nice, refreshing twist to your everyday taco recipe. The salsa is refreshing thanks to the mango and cucumber, it’s healthy and, best of all, you can prepare it ahead of time. It keeps in a jar in the fridge for 3-5 days. This recipe serves between 4 and 6 people (depending on how hungry everyone is!), so adjust ingredients accordingly!
Ingredients
1 mango, peeled and chopped
1 small cucumber, peeled and diced (about 1/2 cup)
1 tbsp. jalapeño, finely chopped
1/3 c. red onion, diced
1/2 c. red pepper, diced
1 tbsp. lime juice
1 can black beans, rinsed & drained
1/3 c. fresh cilantro leaves, chopped
Salt and pepper, to taste
Directions
Combine all of the ingredients except for the salt and pepper in a bowl and mix well.
Season with salt and pepper, to taste. Refrigerate until ready to serve.
Serve with dairy-free & soy-free tortilla chips for dipping.
