Kids are either back in school or headed back to school very soon. With back-to-school comes the proverbial question — what will we have for an after school snack today? No doubt your family has some tried and true favorites that you come back to time and time again, but adding some new treats to the rotation never hurts. Below, I’m sharing some quick and easy snacks that are old favorites in our house. I hope you like them as much as we do!
ANTS ON A LOG
(Serves 1)
Ingredients
1 banana, sliced lengthwise or into rings (your choice!)
2 tbsp. raisins
1-2 tbsp. peanut butter (if you’d like a peanut-free alternative, you can use sunflower seed butter such as SunButter Organic Sunflower Seed Spread)
Directions
Spread the peanut butter or sunflower seed butter over each banana half.
Top with raisins and enjoy!
CHOCO-FRUIT
(Serves 2)
Ingredients
1 apple or pear, sliced into wedges
1/2 c. dairy-free, soy-free chocolate chips (such as Enjoy Life Semi-Sweet Chocolate Mini Chips)
1/3 c. dairy-free, soy-free granola (we like Enjoy Life Double Chocolate Crunch Granola)
Directions
In a small bowl, melt the chocolate chips in the microwave (use 20-second intervals, stirring in between so you don’t burn the chocolate)
Dip the fruit into the chocolate first, then roll in the granola
Chill in the refrigerator for 5-10 minutes to set the chocolate and enjoy!
Variation: You can substitute bananas, pineapples, cantaloupe or any other firm, seedless fruit for the apples or pears. Get creative!
S’MORE MADNESS
(Serves 4)
Ingredients
12 jumbo marshmallows
1/2 c. dairy-free, soy-free chocolate chips (such as Enjoy Life Semi-Sweet Chocolate Mini Chips)
1/2 c. dairy-free, soy-free graham crackers, crumbled (such as Back to Nature Honey Graham Sticks)
Directions
In a small bowl, melt the chocolate chips in the microwave (use 20-second intervals, stirring in between so you don’t burn the chocolate).
Dip each marshmallow into the chocolate so half of the marshmallow is covered in chocolate.
While the chocolate is wet, top with the crumbled graham crackers.
Place in the refrigerator for 5-10 minutes so the chocolate sets and enjoy!
